通年の year-round/ 最大限にする（引き出す） maximize
I could make a reservation at a famous Italian restaurant, Al chechano in Tomamu, which is open year-roundin Shonai, Yamagata, and only during the summer in Hokkaido.
庄内にある有名なイタリアン「アルケチャーノ」に予約がとれました！ 山形（そして銀座にも）通年のお店があり、北海道では夏の間だけ営業しているのです。
The chef, Okuda, who was introduced in a famous TV program, uses ingredients harvested in the area and cooks dishes to maximize the taste of the ingredients.奥田シェフはテレビの「情熱大陸」でも紹介され、地産地消で、素材の味を最大限に生かす料理人（世界のシェフ1000人＜日本人は11人だけとか＞）。
やった！予約がとれました。ノンアルコールワインは葡萄ジュースのお味。ゴボウのフライとゴボウのすりおろしだけでいただく牛タン。美味です。
He uses, for example, freshly grated vegetables instead of sauce. Thinly sliced potato boiled at 68 degrees to keep it’s sweetness and crispiness, wasabi sherbet with celery, foie gras with shonai rice risotto, beef tongue with fried and grated burdock and so on… They are really delicious!
たとえば、ソースのかわりに新鮮な野菜のすりおろしを使ったり。うす～くスライスされたポテトは、その甘さとシャッキリ感を生かす温度、68度でゆでられ、わさびシャーベットにセロリが乗り、牛タンにはフライとすりおろしのゴボウ……これが、本当においしいのです！
わさびのシャーベットもセロリもデザートそのもの。不思議。フォアグラはとろけて、庄内米とよくあいます。カッペリーニはトマトの味だけでいただきます！
Their original non-alcohol wine (it’s just like fresh grape juice) is great! There were many dishes (actually more than 10 cuisines) in the course, but you never would be bored and they are all easy on your stomach.
オーガニックのノンアルコールワイン（まるで葡萄ジュース！）も絶品！コース料理は10品以上ながら、決して飽きることなく、胃にもやさしく。
１時間半も遅刻しちゃいましたが、「気を付けてゆっくりいらしてくださいね」なんて逆に気遣いいただきました。
