Yudero 191 is an Italian restaurant which is produced by Okuda chef of “Al chechano” , who is famous for local production for local consumption of Shonai, Yamagata.
庄内地方の地産地消イタリアン「アル・ケッチァーノ」奥田シェフがプロデュースするパスタ専門店。
The pasta is carefully boiled depending on the sauce and the amount of salt adjusted accordingly.
その名の通り、ソースにあわせてパスタの茹で時間も塩も調整するこだわりぶり。
I had pasta with Shonai-pork bacon and vegetables.
私は、庄内豚のベーコンと野菜のパスタをいただいて……
The ingredients were lightly fried and very crispy, as if I was having a salad. They were also very sweet. Vegetables and the pasta which has body and a pinch of salt were just a perfect combination.
かる～く痛めた野菜はとてもシャキシャキで、まるでサラダのようでありつつ、甘～いのです。
野菜ノシャッキリ感とパスタのコシと、そしてほんの少しの塩がもう絶妙！
Pasta lunch was from 1500 yen～。 It’s located in Tokyo station.
パスタとサラダセットで1500円～でした。場所は、東京駅構内１階。牛タンや利休や、やぶそばの近くの通路。
メニューもお値段も、その日のお野菜しだいだから、メニューもざっくりとマジックで手書きでした。そこがまた旬感タップリ。
アル・ケッチャーノはあの落合シェフも絶賛の奥田シェフ（世界の１００シェフ）のお店。
